At first glance, the fries seem familiar, yet their taste varies subtly depending on where they are eaten. This difference does not come from the potato itself, but from the oil used to cook them. In most regions, the trend has moved towards plant-based oils. In the United States, the fries are cooked in vegetable oil, but beef flavour is added during processing, creating a discrepancy between the substance and the taste. In Europe and the Middle East, the system is more straightforward, using only plant oils and no animal products, reflecting supply stability and regulatory or cultural requirements. Japan stands apart. Here, beef tallow is blended into the frying oil as a physical element, not just an abstract flavour. This creates a stronger aroma and a more immediate sensory impact, closer to that of older formulations. Across Asia, variation continues. Some markets operate entirely on plant oils, with certification requirements sometimes shaping the process. Others are less explicit, but still follow the broader shift towards vegetable-based systems. The consistency of the menu hides this diversity. What appears uniform is in fact adjusted locally to balance cost, culture and expectation. The fries are a compromise, with the original character of beef fat either preserved, replaced or translated. The result is not a single global taste, but rather a series of regional choices layered onto the same basic form. Each region decides how much of the past to carry forward.
